Mediterranean Chicken Wrap Recipe

2 large chicken breasts, cooked and sliced thinly (this can be substituted for ready made sliced chicken breasts from your grocery store if you do not have cooking resources available.)

4 large whole wheat wraps or tortillas

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and sliced

½ cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup Greek yogurt

2 tablespoons lemon juice

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Instructions:

In a small bowl, mix together the Greek yogurt, lemon juice, extra virgin olive oil, salt, and pepper to make the dressing.

Lay out the whole wheat wraps or tortillas on a clean surface.

Spread a thin layer of the Greek yogurt dressing onto each wrap.

Divide the sliced chicken evenly among the wraps, placing it in the center of each wrap.

Top the chicken with cherry tomatoes, cucumber slices, red onion slices, Kalamata olives, crumbled feta cheese, fresh parsley, and fresh mint.

Fold in the sides of each wrap and then roll them up tightly, starting from the bottom, to enclose the filling.

Slice the wraps in half diagonally for easier handling and serving.
